Sometimes you just have to get back to basics and make something that involves very little making. Call it laziness, call it a lingering fear of my oven from that time I set my kitchen on fire, call it what you will. I’m going to call it fucking delicious.

Raw vegan food is a funny thing to me. Every good raw vegan food I’ve eaten always seems just short of magic. I typically only have the faintest ideas of how these goodies are made. Juice Generation’s Young Coconut Pad Thai is conceivable only in my dreams. Pure Food and Wine’s “scallops” are an exercise in sheer mysticism. And Organic Avenue’s Chili Cookie Sandwich is…well actually, it’s kind of doable. As long as we’re not trying to reproduce the cream, which may or may not involve a damn wand.

So yes, the inspiration here lies in the doableness (that’s what the Brownie said to the Blondie? Kind of? No?) of Organic Avenue’s super tasty cookie sandwich. When I checked out the ingredient list and saw only the most basic things, I decided that this should be the thing I make that involves very little making.

And so my Raw Vegan Blondies and Brownies and Drunken Orgy were born.

By magic. And a food processor. And magic.

BROWNIES
makes 12 squares

ingredients:

  • 26g ground flaxseed
  • 18g unsweetened cocoa powder
  • 45g peanut butter
  • 1 tablespoon agave
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 30g walnut pieces
  • coarse salt for sprinkling

I like it when the things taste like things that you wouldn’t think they’d taste like, you know?

Toss the flaxseed and cocoa powder into a food processor. Process a bit. Add the peanut butter, agave, vanilla, and salt. Process til it’s a paste/doughy substance. Add the walnuts and process but not too, too long. Just enough to make them coarsely chopped.

For only brownies: Get out a baking pan. Line it with wax or parchment paper. Press the dough into the pan. Sprinkle with coarse salt. Freeze for an hour or so. Cut up into 12 squares.

For dirty blondes: stay tuned…

BLONDIES
makes 12 squares

ingredients:

  • 42g coconut flour
  • 42g almond flour
  • 12g ground flaxseed
  • 42g coconut oil
  • 1 tablespoon agave OR 1 tablespoon maple syrup OR a combination of both
  • 3 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • coarse salt for sprinkling

I wanted to make redheaded sluts but I’m the only raw vegan redheaded slut I know and that’s only on weekends:

Combine the coconut flour, almond flour, and flaxseed into a food processor and, you know, process. Add the coconut oil, agave/maple syrup/whatever, vanilla extract and salt. Process til it’s a paste/doughy thing.

For only blondies: Get out a baking pan. Line it with wax or parchment paper. Press the dough into the pan. Sprinkle with coarse salt. Freeze for an hour or so. Cut up into 12 squares.

DIRTY BLONDES
makes 12 double squares

ingredients:

  • brownies
  • blondies
  • the desire for greatness

this one’s easy:

Get out a baking pan. Line it with wax or parchment paper. Press the blondie dough into the pan. Press the brownie dough on top of it. Sprinkle with coarse salt. Freeze for an hour or so. Cut up into 12 squares. Devour, you dirty, dirty girl.

  1. is the agave acting as a binder or will the ingredients “hold together” without it?

    1. I used it as a sweetener. You shouldn’t have any trouble with the doughs staying together without but you might want to add some Truvia or another sweetener in its place.
