Ok. So this may not really deserve its own post because I hinted at it during that whole Steve’s BKLYN Blackout Ice Cream Review the other day. And I’m using my Soft and Chewy Vegan Chocolate Chip Graham Cracker Cookies from the other other day too because, thanks to the baking powder and applesauce, they’re the perfect consistency for such an endeavor. And I don’t know what else to do with a dozen and a half cookies.
Dear Ice Cream Sandwich,
I don’t care if you never move out of the house. You’ll always be my favorite.
But, um, these are ice cream sandwiches? And so by default? They deserve their own special moment? Question mark?
Period.
This is the only sandwich you will ever see me eat.
It’s called “healthy decisions.”

- Steve’s BKLYN Blackout Ice Cream
- Willpower
I’m going to explain how to put ice cream in between cookies now:
Get out 2 cookies. Put a scoop of ice cream in between the 2 cookies. Press the two cookies together. I’m embarrassed you’re still reading this part. Why haven’t you eaten it yet? Eat. Go on a really, really long run. There’s nothing quite like running on a ice cream cookie sandwich stomach.
